Made of only kelp (a sea vegetable), sodium alginate (sodium salt extracted from a brown seaweed), and water, Kelp Noodles are fat-free, gluten-free, and very low in carbohydrates and calories.     Fishead

    I was pleasantly surprised by these! I tried them straight out the package and they had a slightly salty taste with a bit of a bitter aftertaste (which went away with some rinsing) . I rinsed them well and used them in a Japchae recipe. At first they have a unique crunchy texture that worked well in the dish. After about 20-30 minutes sitting with sauce and the other hot ingredients the noodles softened and were more chewy like the traditional sweet potato starch noodles. My family ate them with gusto. I definitely will eat them again and can’t wait to try the other varieties!

    Fantastic!!!!!! These noodles add a great texture to meat sauce dishes when going the with the spahgetti theme or as part of a vegetable mix for a salad dish. And the guilt free after meal aura keeps you coming back for more.
